- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: Prepare the muffin tin by lining it with paper liners or greasing it with non-stick spray.
- Step 3: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- Step 4: In a large bowl, combine applesauce, molasses, brown sugar, egg, vegetable oil, and vanilla extract. Mix until fully incorporated.
- Step 5: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Step 6: If using, fold in the chopped nuts.
- Step 7: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Step 8: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Step 9: Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Store leftover muffins in an airtight container at room temperature for up to three days. They freeze well for up to three months.
