  • 1 can sweet corn 15 ounces, drained
  • 1 can diced jalapeños 4 ounces, drained
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cumin
  • Salt and pepper
  • Fresh cilantro for garnish (optional)
  • Tortilla chips for serving

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the drained sweet corn, drained diced jalapeños, softened cream cheese, sour cream, shredded cheddar cheese, shredded Monterey Jack cheese, garlic powder, onion powder, cumin, and salt and pepper to taste. Mix until well combined.
  3. Step 3: Transfer the mixture to a greased baking dish and spread it evenly.
  4. Step 4: Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
