  • 2 cups vegetable or chicken broth low-sodium for healthier option
  • 1 cup basil pesto store-bought or homemade
  • 1 cup Parmesan cheese grated
  • 1 cup cherry tomatoes halved
  • 1 tbsp olive oil
Salt and pepper
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).

  3. Step 3: In a large mixing bowl, combine the cooked orzo with the basil pesto, half of the grated Parmesan cheese, halved cherry tomatoes, olive oil, salt, and pepper. Mix well.
  4. Step 4: Transfer the orzo mixture to a greased baking dish and spread it evenly.
  5. Step 5: Sprinkle the remaining Parmesan cheese over the top.
  6. Step 6: Bake for 20-25 minutes or until the top is golden brown and bubbly.
  7. Step 7: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired.
