- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x5 inch loaf pan.
- Step 3: In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until combined.
- Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in nuts or chocolate chips if desired.
- Step 6: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Step 7: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Step 8: Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
