  • 4 lb beef back ribs
  • 1/2 cup brown sugar
  • 1/4 cup paprika
  • 2 tbsp black pepper
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp salt
  • 1 tsp cayenne pepper
  • 1 cup apple juice
  • Wood chips for smoking

Method
 

  1. Step 1: In a bowl, combine the brown sugar, paprika, black pepper, garlic powder, onion powder, salt, and cayenne pepper. Mix well until all the ingredients are evenly distributed.
  2. Step 2: Pat the beef ribs dry with paper towels and generously apply the dry rub to all sides. Wrap tightly in plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  3. Step 3: Preheat your smoker to 225°F (107°C) and soak the wood chips in water for about 30 minutes.
  4. Step 4: Bring the ribs to room temperature for about 30 minutes before placing them in the smoker.
  5. Step 5: Place the ribs bone-side down in the smoker and add the soaked wood chips. Smoke for approximately 4 to 5 hours, or until the internal temperature reaches 195°F (90°C).
  6. Step 6: Baste the ribs with apple juice every 30 minutes during the last hour of cooking.
  7. Step 7: Once cooked, remove the ribs from the smoker and let them rest for 10-15 minutes before slicing.
  8. Step 8: Slice the ribs between the bones and serve hot with your favorite sides.

Notes

Consider using alternative sweeteners like coconut sugar or maple sugar for a different flavor. Adjust the cayenne pepper to suit your spice preference.
