- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, and sprinkle with salt and pepper to taste. Toss everything together until the florets are evenly coated.
- Step 3: Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, stirring halfway through.
- Step 4: While the cauliflower is roasting, bring vegetable broth to a boil in a medium pot. Add orzo pasta and cook according to package instructions until al dente.
- Step 5: In a large mixing bowl, combine the cooked orzo, roasted cauliflower, buffalo sauce, shredded cheese, and softened cream cheese. Stir everything together until well combined.
- Step 6: Grease your baking dish with olive oil or cooking spray. Transfer the mixture into the dish, spreading it out evenly.
- Step 7: Place the baking dish in the oven and bake for another 20-25 minutes, or until the cheese is bubbly and golden brown.
- Step 8: Once baked, remove the dish from the oven and allow it to cool slightly. Garnish with chopped green onions before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
