  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese grated
  • Salt and pepper to taste

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a pot, bring water to a boil and add the orzo pasta. Cook according to the package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add thinly sliced onions and cook, stirring occasionally, for about 15-20 minutes until caramelized.
  4. Step 4: Add minced garlic and fresh thyme leaves to the skillet. Cook for an additional 1-2 minutes until fragrant.
  5. Step 5: In a mixing bowl, combine vegetable broth, heavy cream, half of the Gruyère cheese, and season with salt and pepper. Stir until well blended.
  6. Step 6: Add the cooked orzo and the caramelized onion mixture to the creamy mixture. Stir gently to ensure everything is well coated.
