- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a pot, bring water to a boil and add the orzo pasta. Cook according to the package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add thinly sliced onions and cook, stirring occasionally, for about 15-20 minutes until caramelized.
- Step 4: Add minced garlic and fresh thyme leaves to the skillet. Cook for an additional 1-2 minutes until fragrant.
- Step 5: In a mixing bowl, combine vegetable broth, heavy cream, half of the Gruyère cheese, and season with salt and pepper. Stir until well blended.
- Step 6: Add the cooked orzo and the caramelized onion mixture to the creamy mixture. Stir gently to ensure everything is well coated.
- Step 7: Transfer the mixture into a baking dish, spreading it evenly. Top with the remaining Gruyère cheese.
- Step 8: Bake for 25-30 minutes or until the top is golden and bubbly.
- Step 9: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.

This dish can be prepared in advance and stored in the refrigerator. Just reheat it in the oven before serving.
