  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 0.5 cup breadcrumbs
  • 2 tbsp butter melted
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large pot, bring salted water to a boil. Add orzo and cook until al dente, about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add onions and cook until golden brown and caramelized, about 20-25 minutes.
  4. Step 4: Add minced garlic and thyme to the skillet and cook for 1-2 minutes until fragrant.
  5. Step 5: In a large mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, and half of the Gruyère cheese. Season with salt and pepper.
  6. Step 6: Transfer the mixture to a greased baking dish and sprinkle the remaining Gruyère cheese on top.
  7. Step 7: Mix breadcrumbs with melted butter and sprinkle over the cheese layer.
  8. Step 8: Bake for 25-30 minutes until the top is golden and bubbly.
