- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large pot, bring salted water to a boil. Add orzo and cook until al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add onions and cook until golden brown and caramelized, about 20-25 minutes.
- Step 4: Add minced garlic and thyme to the skillet and cook for 1-2 minutes until fragrant.
- Step 5: In a large mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, and half of the Gruyère cheese. Season with salt and pepper.
- Step 6: Transfer the mixture to a greased baking dish and sprinkle the remaining Gruyère cheese on top.
- Step 7: Mix breadcrumbs with melted butter and sprinkle over the cheese layer.
- Step 8: Bake for 25-30 minutes until the top is golden and bubbly.
- Step 9: Allow to cool slightly before serving, garnished with fresh parsley if desired.
