- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Step 3: Stir in 2 cloves of minced garlic and cook for an additional 1 minute.
- Step 4: Add 1 cup of orzo pasta to the pot and stir to combine with the onion and garlic.
- Step 5: Pour in 2 cups of vegetable broth and 1 cup of heavy cream. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
- Step 6: Remove from heat and stir in 1 cup of mozzarella cheese, 1 cup of grated Parmesan cheese, and 1 teaspoon of dried oregano. Season with salt and pepper to taste.
- Step 7: Transfer the orzo mixture to a greased baking dish and spread evenly.
- Step 8: Place in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
- Step 9: Remove from the oven, let cool, and garnish with chopped fresh parsley before serving.
