  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Step 3: Stir in 2 cloves of minced garlic and cook for an additional 1 minute.
  4. Step 4: Add 1 cup of orzo pasta to the pot and stir to combine with the onion and garlic.
  5. Step 5: Pour in 2 cups of vegetable broth and 1 cup of heavy cream. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
  6. Step 6: Remove from heat and stir in 1 cup of mozzarella cheese, 1 cup of grated Parmesan cheese, and 1 teaspoon of dried oregano. Season with salt and pepper to taste.
  7. Step 7: Transfer the orzo mixture to a greased baking dish and spread evenly.
  8. Step 8: Place in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
