  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh, frozen, or canned
  • 1 cup black beans drained and rinsed
  • 1/2 cup red bell pepper diced
  • 1/2 cup green onions sliced
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup ranch dressing
  • 2 tbsp chipotle sauce adjust based on your spice preference
  • Salt and pepper
  • Fresh cilantro

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add in 8 ounces of pasta of your choice and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Be sure to stir occasionally to prevent sticking.
  2. Step 2: Once the pasta is cooked, drain it in a colander and rinse it under cold water. This stops the cooking process and cools the pasta down, making it perfect for a salad.
  3. Step 3: While the pasta is cooling, prepare your vegetables. Halve 1 cup of cherry tomatoes, dice 1/2 cup of red bell pepper, and slice 1/2 cup of green onions. If you’re using canned corn, drain it, and if using frozen, make sure it’s thawed.
  4. Step 4: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, corn, black beans, diced red bell pepper, sliced green onions, and shredded cheddar cheese. Stir gently to combine, ensuring that all ingredients are evenly distributed.
