- Step 1: Start by bringing a large pot of salted water to a boil. Add in 8 ounces of pasta of your choice and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Be sure to stir occasionally to prevent sticking.
- Step 2: Once the pasta is cooked, drain it in a colander and rinse it under cold water. This stops the cooking process and cools the pasta down, making it perfect for a salad.
- Step 3: While the pasta is cooling, prepare your vegetables. Halve 1 cup of cherry tomatoes, dice 1/2 cup of red bell pepper, and slice 1/2 cup of green onions. If you’re using canned corn, drain it, and if using frozen, make sure it’s thawed.
- Step 4: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, corn, black beans, diced red bell pepper, sliced green onions, and shredded cheddar cheese. Stir gently to combine, ensuring that all ingredients are evenly distributed.
- Step 5: In a separate bowl, mix together 1/2 cup of ranch dressing and 2 tablespoons of chipotle sauce. Taste the dressing and adjust the spice level according to your preference.
- Step 6: Pour the chipotle ranch dressing over the pasta mixture and toss everything gently until well combined. Season with salt and pepper to taste.
- Step 7: Before serving, garnish your pasta salad with freshly chopped cilantro. You can serve the salad immediately or refrigerate it for about 30 minutes to let the flavors meld together.
