- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x5-inch loaf pan.
- Step 3: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
- Step 4: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Step 6: If desired, fold in the chopped nuts and raisins or chocolate chips.
- Step 7: Pour the batter into the prepared loaf pan and spread it evenly.
- Step 8: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Step 9: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
