  • 8 oz rotini pasta
  • 2 cups cooked chicken, diced use rotisserie chicken for convenience or grill your own for a healthier option
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing choose your favorite brand or make your own
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Cook the rotini pasta by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions, usually about 8-10 minutes until al dente. Stir occasionally to prevent sticking.
  2. Step 2: Once the pasta is cooked, drain it in a colander. Rinse the pasta under cold water to stop the cooking process and cool it down.
  3. Step 3: In a large mixing bowl, combine the cooled rotini pasta, diced chicken, halved cherry tomatoes, and chopped romaine lettuce.
  4. Step 4: Pour the Caesar dressing over the pasta and other ingredients. Using a wooden spoon or spatula, gently toss everything together until well coated.
  5. Step 5: Add the grated Parmesan cheese to the bowl. Season with salt and pepper to taste.
  6. Step 6: Just before serving, sprinkle the croutons over the top for crunch and garnish with chopped parsley.
