Ingredients
  

For the Pasta Salad
  • 8 oz rotini pasta
  • 4 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chives or green onions for garnish

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, usually around 7-9 minutes. Drain the pasta using a colander and rinse it under cold water.
  2. Step 2: While the pasta is cooking, prepare the other ingredients. Cook the bacon until crispy, then crumble it. Halve the cherry tomatoes and chop the romaine lettuce. Set aside in a large mixing bowl.
  3. Step 3: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, and salt and pepper to taste until smooth and creamy.
  4. Step 4: In the large bowl with the chopped vegetables, add the cooled pasta and crumbled bacon. Pour the dressing over the top and gently toss everything together until well-coated.
  5. Step 5: Cover the salad and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Step 6: Once chilled, give the salad a good stir before serving. Garnish with chopped chives or green onions if desired and serve cold.

Notes

This salad can be made ahead of time and tastes better after sitting in the refrigerator. Store in an airtight container for up to 3 days.
