  • 1 lb beef sirloin thinly sliced
  • 1 medium onion sliced
  • 1 medium green bell pepper sliced
  • 3 cloves garlic minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 cup provolone cheese shredded

Method
 

  1. Step 1: Begin by slicing the beef sirloin into thin strips. Next, slice the onion and green bell pepper into strips and mince the garlic.
  2. Step 2: In the crock pot, add the sliced beef sirloin, onion, green bell pepper, and minced garlic. Distribute them evenly.
  3. Step 3: In a separate bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Pour this mixture over the beef and vegetables in the crock pot.
  4. Step 4: Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Step 5: About 30 minutes before serving, stir in the refrigerated cheese tortellini. Cover and continue to cook on high until heated through.
  6. Step 6: Just before serving, stir in the shredded provolone cheese until melted.

Notes

If you find the sauce too thick, you can add a splash more beef broth to reach your desired consistency.
