- Step 1: Begin by slicing the beef sirloin into thin strips. Next, slice the onion and green bell pepper into strips and mince the garlic.
- Step 2: In the crock pot, add the sliced beef sirloin, onion, green bell pepper, and minced garlic. Distribute them evenly.
- Step 3: In a separate bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Pour this mixture over the beef and vegetables in the crock pot.
- Step 4: Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours.
- Step 5: About 30 minutes before serving, stir in the refrigerated cheese tortellini. Cover and continue to cook on high until heated through.
- Step 6: Just before serving, stir in the shredded provolone cheese until melted.
Notes
If you find the sauce too thick, you can add a splash more beef broth to reach your desired consistency.
