Ingredients

For the Salad
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 head iceberg lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup black olives sliced
  • 1 cup corn canned or frozen
  • 1 bag Doritos crushed (9 oz)
  • 1 cup ranch dressing
Optional Garnishes
  • diced avocado
  • jalapeños
  • green onions

Equipment

  • Large Skillet
  • Spatula or Wooden Spoon
  • Large Mixing Bowl
  • Measuring Cups
  • Chef’s Knife
  • Cutting Board
  • Serving Bowl
  • Small Bowl

Method

  1. Step 1: In a large skillet over medium heat, add the pound of ground beef. Use a spatula to break the meat apart as it cooks. Stir occasionally and cook until the beef is fully browned, about 7-10 minutes. Once cooked, drain any excess fat from the skillet.
  2. Step 2: After draining the beef, return it to the skillet. Sprinkle the taco seasoning over the meat and pour in 1 cup of water. Stir well and allow it to simmer for about 5 minutes, or until the mixture thickens.
  3. Step 3: In a large mixing bowl, add the chopped iceberg lettuce. Next, add the halved cherry tomatoes, shredded cheddar cheese, sliced black olives, and corn. Toss these ingredients together to mix them evenly.
  4. Step 4: Add the beef mixture to the salad bowl with the other ingredients and toss everything together gently but thoroughly.
  5. Step 5: Gently fold in the crushed Doritos, being careful not to break them down too much.
  6. Step 6: Drizzle the ranch dressing over the salad and toss to coat all ingredients evenly.
  7. Step 7: If desired, add optional garnishes like diced avocado, jalapeños, or green onions. Serve immediately in a decorative bowl.

Notes

Keep the Doritos separate until you’re ready to serve to maintain their crunch. This salad is perfect for meal prep as it stores beautifully in the fridge.
