- Step 1: Preheat the oven to 350°F (175°C) and grease your 9x9-inch baking pan.
- Step 2: In a mixing bowl, combine the all-purpose flour, granulated sugar, softened butter, brown sugar, salt, and baking powder. Use a fork or pastry cutter to mix until crumbly.
- Step 3: Press the mixture firmly into the bottom of the prepared baking pan.
- Step 4: In another bowl, whisk together the egg, diced rhubarb, lemon juice, and lemon zest until well combined.
- Step 5: Pour the filling over the crust in the baking pan. Spread it evenly if needed.
- Step 6: Place the baking pan in the preheated oven and bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
- Step 7: Once baked, remove the pan from the oven and allow the bars to cool completely. Dust with powdered sugar, cut into squares, and serve!
Notes
Store any leftover bars in an airtight container in the refrigerator. They should keep well for up to a week.
