- Step 1: Preheat your oven to 350°F (175°C) and grease and flour your 9x5 inch loaf pan.
- Step 2: In a large mixing bowl, combine the grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Mix until well combined.
- Step 3: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
- Step 4: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Step 5: If desired, fold in the chopped walnuts or pecans.
- Step 6: Pour the batter into the prepared loaf pan and smooth the top with your spatula.
- Step 7: Bake for 50-60 minutes. Check for doneness with a toothpick.
- Step 8: Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
