Ingredients
  

For the Salad
  • 12 oz fresh tortellini choose your favorite type (cheese, spinach, etc.)
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell pepper diced
  • 1 cup black olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Step 1: Bring a large pot of salted water to a boil. Add the fresh tortellini and cook according to the package instructions, usually around 3-5 minutes. Once cooked, drain the tortellini in a colander and rinse under cold water.
  2. Step 2: While the tortellini cooks, wash and prepare your vegetables. Dice the cucumber, halve the cherry tomatoes, slice the red onion thinly, and dice the bell pepper.
  3. Step 3: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, bell pepper, black olives, feta cheese, and fresh basil. Use a spatula to gently fold the ingredients together.
  4. Step 4: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper. Adjust seasoning as desired.
  5. Step 5: Pour the dressing over the tortellini salad and toss gently to combine. Cover and chill in the refrigerator for at least 30 minutes.

Notes

This salad stores well in the fridge for up to 3 days, and it tastes even better the next day as the flavors meld together.
