  • 1/2 cup cilantro chopped
  • 1 cup ranch dressing
  • 2 tbsp lime juice

Method
 

  1. Step 1: Start by shredding the medium head of green cabbage. You can use a sharp knife or a mandoline for even, thin shreds. Place the shredded cabbage in a large mixing bowl.
  2. Step 2: Halve the cherry tomatoes and add them to the bowl. If using canned corn, drain it well; if using frozen, ensure it’s thawed. Add the corn and rinsed black beans.
  3. Step 3: Dice the red onion and chop the cilantro. Toss them into the mixing bowl with the other ingredients.
  4. Step 4: In a separate bowl, combine the ranch dressing with lime juice. Season the dressing with salt and pepper to taste.
