- Step 1: Start by shredding the medium head of green cabbage. You can use a sharp knife or a mandoline for even, thin shreds. Place the shredded cabbage in a large mixing bowl.
- Step 2: Halve the cherry tomatoes and add them to the bowl. If using canned corn, drain it well; if using frozen, ensure it’s thawed. Add the corn and rinsed black beans.
- Step 3: Dice the red onion and chop the cilantro. Toss them into the mixing bowl with the other ingredients.
- Step 4: In a separate bowl, combine the ranch dressing with lime juice. Season the dressing with salt and pepper to taste.
- Step 5: Pour the dressing over the cabbage mixture. Using salad tongs, gently toss everything together until all the ingredients are evenly coated with the dressing.
- Step 6: Just before serving, add the shredded cheddar cheese and Fritos corn chips to the salad. Fold them in at the last moment to ensure they maintain their crunch.
- Step 7: You can serve your Frito Cowboy Cabbage Salad immediately for the freshest taste, or refrigerate for up to an hour to allow the flavors to meld.
