- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the sliced peaches with the granulated sugar, lemon juice, vanilla extract, cornstarch, and ground cinnamon. Stir until the peaches are well-coated.
- Step 3: Pour the peach mixture into a greased 9x13-inch baking dish. Spread it out evenly.
- Step 4: In another bowl, mix together the gluten-free oats, almond flour, brown sugar, melted coconut oil, salt, ground cinnamon, and chopped almonds (if using). Stir until fully combined.
- Step 5: Evenly distribute the topping mixture over the peach filling in the baking dish.
- Step 6: Place your baking dish in the preheated oven and bake for 30-35 minutes.
- Step 7: Once baked, remove the crisp from the oven and allow it to cool slightly before serving.
Notes
Leftover peach crisp can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
