- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the shredded chicken, diced green chiles, sour cream, shredded cheddar cheese, cooked rice, cream of chicken soup, garlic powder, onion powder, cumin, and salt and pepper. Use a spatula or wooden spoon to mix everything together until well combined.
- Step 3: Lightly grease your 9x13 inch baking dish with cooking spray. Pour the mixture into the dish, spreading it out evenly.
- Step 4: Sprinkle the crushed tortilla chips evenly over the top of the casserole.
- Step 5: Place the casserole in the preheated oven and bake for 25-30 minutes until heated through and the top is golden brown and bubbly.
- Step 6: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired.
