- Step 1: In a medium saucepan, combine the cranberries and water. Place the saucepan over medium heat and bring the mixture to a boil.
- Step 2: Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes until the cranberries have burst and softened.
- Step 3: Using a fine mesh sieve, strain the mixture into a bowl or pitcher, pressing down on the solid cranberries to extract as much juice as possible.
- Step 4: While the juice is still warm, add honey and vanilla extract (if using). Stir thoroughly until the honey is fully dissolved.
- Step 5: Allow the juice to cool at room temperature, then transfer it to the refrigerator and chill for at least 1 hour.
- Step 6: Serve the juice over ice in glasses and garnish with fresh mint leaves.
Notes
For a zesty twist, incorporate the juice of one orange or lemon into the mixture. This not only enhances the flavor but also adds a dose of Vitamin C!
