Method
 

  1. Step 1: In a medium saucepan, combine the cranberries and water. Place the saucepan over medium heat and bring the mixture to a boil.
  2. Step 2: Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes until the cranberries have burst and softened.
  3. Step 3: Using a fine mesh sieve, strain the mixture into a bowl or pitcher, pressing down on the solid cranberries to extract as much juice as possible.
  4. Step 4: While the juice is still warm, add honey and vanilla extract (if using). Stir thoroughly until the honey is fully dissolved.
  5. Step 5: Allow the juice to cool at room temperature, then transfer it to the refrigerator and chill for at least 1 hour.
  6. Step 6: Serve the juice over ice in glasses and garnish with fresh mint leaves.

Notes
