  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 medium red onion thinly sliced
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 1/4 cup hot honey
  • 2 tbsp red wine vinegar

Method
 

  1. Step 1: Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente. This typically takes around 8-10 minutes. Make sure to stir occasionally to prevent sticking.
  2. Step 2: Drain and Cool: Once the pasta is cooked, drain it in a colander and rinse it under cold water to stop the cooking process. Set it aside to cool completely.
  3. Step 3: Prepare the Vegetables: While the pasta is cooling, chop your vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the red onion thinly. Be sure to chop the fresh basil as well.
  4. Step 4: Make the Dressing: In a small bowl, whisk together the olive oil, hot honey, red wine vinegar, salt, and pepper. Adjust the seasoning to your taste.
  5. Step 5: Combine Ingredients: In a large mixing bowl, combine the cooled pasta with the chopped vegetables and fresh basil. Pour the prepared dressing over the top and toss gently to combine.
