- Step 1: In a mixing bowl, combine the shredded chicken, garlic powder, onion powder, cumin, salt, and pepper. Mix well to ensure that all the spices are evenly distributed throughout the chicken.
- Step 2: Heat the olive oil in a skillet over medium heat.
- Step 3: Place one low-carb tortilla in the skillet. Spread half of the chicken mixture evenly over the tortilla, then sprinkle half of the shredded cheese on top.
- Step 4: Top with a second tortilla and cook for 2-3 minutes until golden brown and cheese starts to melt. Carefully flip and cook for an additional 2-3 minutes until the second side is golden brown.
- Step 5: Remove from the skillet, let cool, then cut into wedges. Repeat with remaining tortillas and filling.
Notes
You can prepare the quesadillas ahead of time and store them in the refrigerator. Just reheat them when you're ready to eat!
