- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Scrub the russet potatoes thoroughly and pierce each potato several times with a fork.
- Step 3: Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
- Step 4: Remove the potatoes from the oven, let them cool slightly, and slice each potato in half lengthwise.
- Step 5: Gently scoop out a portion of the potato flesh into a mixing bowl, leaving a thin layer inside.
- Step 6: Combine the scooped potato flesh with melted butter, sour cream, half of the cheddar cheese, half of the bacon, salt, and pepper.
- Step 7: Spoon the mixture back into the potato skins and top with remaining cheddar cheese and bacon.
- Step 8: Drizzle with barbecue sauce and return to the oven for an additional 10-15 minutes.
- Step 9: Remove from the oven and garnish with chopped green onions before serving.
Notes
Make it spicy by adding sliced jalapeños or cayenne pepper. You can also prepare the filling ahead of time and store it in the fridge.
