Method
 

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Scrub the russet potatoes thoroughly and pierce each potato several times with a fork.
  3. Step 3: Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  4. Step 4: Remove the potatoes from the oven, let them cool slightly, and slice each potato in half lengthwise.
  5. Step 5: Gently scoop out a portion of the potato flesh into a mixing bowl, leaving a thin layer inside.
  6. Step 6: Combine the scooped potato flesh with melted butter, sour cream, half of the cheddar cheese, half of the bacon, salt, and pepper.
  7. Step 7: Spoon the mixture back into the potato skins and top with remaining cheddar cheese and bacon.
  8. Step 8: Drizzle with barbecue sauce and return to the oven for an additional 10-15 minutes.

Notes
