- Step 1: Rinse the cranberries under cold running water, removing any dirt or impurities.
- Step 2: In a large pot, combine the rinsed cranberries and water. Place the pot over medium-high heat and bring the mixture to a boil.
- Step 3: Once boiling, reduce the heat and let the mixture simmer for 10-15 minutes, stirring occasionally.
- Step 4: Remove from heat and let cool slightly. Strain the mixture into a large bowl using a fine mesh sieve or cheesecloth.
- Step 5: Stir in erythritol and lemon juice until sweetener is dissolved. Adjust sweetness to taste.
- Step 6: Allow the juice to cool completely before transferring it into a bottle or jar for storage.
