Ingredients
  

For the Marinade
  • 1 cup maple syrup
  • 1 cup bourbon
  • 1/4 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp salt
  • 1 tbsp black pepper
For the Ribs
  • 2 racks baby back ribs
  • Wood chips for smoking

Method
 

  1. Step 1: Preheat the Smoker to 225°F (107°C).
  2. Step 2: Prepare the Marinade by combining all marinade ingredients in a mixing bowl and whisking until well blended.
  3. Step 3: Prepare the Ribs by removing the membrane and trimming excess fat.
  4. Step 4: Marinate the Ribs by generously rubbing the marinade over both sides and letting them marinate in the refrigerator for at least 2 hours or preferably overnight.
  5. Step 5: Soak the Wood Chips in water for about 30 minutes.
  6. Step 6: Setup the Smoker with the drained wood chips according to manufacturer’s instructions.
  7. Step 7: Smoke the Ribs for 4-5 hours maintaining a temperature of 225°F (107°C).
  8. Step 8: Brush the Ribs with additional marinade every 20 minutes during the last hour of smoking.
  9. Step 9: Check for Doneness with a meat thermometer to ensure an internal temperature of 190°F to 203°F (88°C to 95°C).
  10. Step 10: Rest and Serve by letting the ribs rest for 10-15 minutes before slicing.
