  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add finely chopped red onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
  3. Step 3: Stir in chopped spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  4. Step 4: Add orzo pasta, vegetable broth, dried oregano, dried basil, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for about 10 minutes.
  5. Step 5: Once orzo is cooked, remove from heat. Fold in crumbled feta cheese, halved cherry tomatoes, and sliced black olives.
  6. Step 6: Grease baking dish with olive oil, transfer orzo mixture into the dish, spreading it evenly.
