- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large mixing bowl, add baby potatoes. Drizzle olive oil over the potatoes and toss until evenly coated.
- Step 3: In a separate bowl, combine cocoa powder, brown sugar, granulated sugar, vanilla extract, salt, and ground cinnamon. Mix well.
- Step 4: Add the cocoa mixture to the bowl with the potatoes. Toss to coat each potato.
- Step 5: Line a baking sheet with parchment paper and spread the coated potatoes evenly.
- Step 6: Bake for 30-35 minutes until tender. Test doneness with a fork.
- Step 7: Remove from oven, sprinkle mini marshmallows and nuts on top, and return to oven for an additional 5-10 minutes.
- Step 8: Serve warm and enjoy!
Notes
For a vegan version, substitute the mini marshmallows with vegan marshmallows. Store leftovers in an airtight container in the refrigerator for up to 3 days.
