  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts optional
  • 1/2 cup chocolate chips optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and grease your 9x5-inch loaf pan.
  2. Step 2: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until fully combined.
