- Step 1: Preheat your oven to 350°F (175°C) and grease your 9x5-inch loaf pan.
- Step 2: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until fully combined.
- Step 3: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the zucchini mixture, stirring gently until just combined.
- Step 4: Fold in the chopped nuts and chocolate chips if desired.
- Step 5: Pour the batter into the prepared loaf pan and smooth the top.
- Step 6: Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Step 7: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
This bread can be enjoyed plain or elevated with nuts or chocolate chips. It freezes well for up to three months!
