  • 0.5 cups brown sugar packed
  • 0.5 cups molasses
  • 2 large eggs
  • 1 tbsp orange zest
  • 0.5 cups milk

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or lightly grease it.
  2. Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
  3. Step 3: In a large bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-5 minutes.
  4. Step 4: Add the molasses and eggs to the butter mixture and mix until well combined.
  5. Step 5: Stir in the orange zest.
