  • 2 lb potatoes such as Yukon Gold or Red, cut into uniform chunks
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary or fresh, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Wash and scrub the potatoes thoroughly. Cut them into uniform chunks, around 1 to 1.5 inches in size.
  3. Step 3: In a large mixing bowl, combine the potato chunks with olive oil, garlic powder, onion powder, dried rosemary, dried thyme, and salt and pepper. Toss until evenly coated.
  4. Step 4: Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  5. Step 5: Roast the potatoes for 25-30 minutes, flipping halfway through for even browning.
  6. Step 6: Check for doneness; they should be golden brown and crispy on the outside and tender inside.
  7. Step 7: Remove from the oven, let cool for a few minutes, and garnish with fresh parsley if desired. Serve hot.

Notes

Feel free to experiment with different herbs and spices. You can also add grated Parmesan cheese during the last 5 minutes of roasting for a cheesy crust.
