- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a mixing bowl, combine the all-purpose flour, chilled and cubed unsalted butter, granulated sugar, and salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Step 3: Add the egg yolk and start incorporating the cold water one tablespoon at a time. Mix until the dough comes together. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Step 4: In a large bowl, combine the chopped rhubarb, sliced apples, granulated sugar, vanilla extract, ground cinnamon, cornstarch, and lemon juice. Mix well and set aside.
- Step 5: Roll out the dough to fit your 9-inch tart pan and gently transfer it to the pan.
- Step 6: Pour the prepared rhubarb and apple filling into the crust and brush the edges with the beaten egg.
- Step 7: Place the tart in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling. Allow it to cool for at least 15 minutes before serving.
