Ingredients
  

For the Tart Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter chilled and cubed
  • 0.25 cup granulated sugar
  • 0.25 teaspoon salt
  • 1 large egg yolk
  • 3-4 tbsp cold water
For the Filling
  • 2 cups rhubarb chopped
  • 2 cups apples peeled and sliced
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 large egg beaten (for egg wash)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a mixing bowl, combine the all-purpose flour, chilled and cubed unsalted butter, granulated sugar, and salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  3. Step 3: Add the egg yolk and start incorporating the cold water one tablespoon at a time. Mix until the dough comes together. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  4. Step 4: In a large bowl, combine the chopped rhubarb, sliced apples, granulated sugar, vanilla extract, ground cinnamon, cornstarch, and lemon juice. Mix well and set aside.
  5. Step 5: Roll out the dough to fit your 9-inch tart pan and gently transfer it to the pan.
  6. Step 6: Pour the prepared rhubarb and apple filling into the crust and brush the edges with the beaten egg.
  7. Step 7: Place the tart in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling. Allow it to cool for at least 15 minutes before serving.

This tart pairs wonderfully with vanilla ice cream, whipped cream, or a drizzle of caramel sauce for an extra treat.
