Method
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease a 9x13 inch baking dish with butter or cooking spray and optionally line it with parchment paper.
- Step 3: In a mixing bowl, combine the crust ingredients and press evenly into the bottom of the baking dish.
- Step 4: Bake the crust for 10-15 minutes or until lightly golden.
- Step 5: While the crust is baking, macerate the rhubarb with sugar for about 10 minutes.
- Step 6: In another bowl, beat together the cream cheese filling ingredients until smooth.
- Step 7: Spread the macerated rhubarb over the baked crust, then pour the cream cheese mixture on top.
- Step 8: Mix the topping ingredients and sprinkle over the cream cheese layer.
- Step 9: Bake for an additional 30-35 minutes or until the topping is golden and filling is set.
- Step 10: Allow to cool before cutting into squares or bars.
Notes
Store leftover bars in an airtight container in the refrigerator for up to 5 days. They can also be frozen for longer storage.
