Ingredients

  • 1 cup all-purpose flour

  • 1/2 cup unsalted butter softened

For the Filling
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • 1/4 teaspoon salt
  • 1 tablespoon all-purpose flour
For the Topping
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter melted

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease a 9x13 inch baking dish with butter or cooking spray and optionally line it with parchment paper.
  3. Step 3: In a mixing bowl, combine the crust ingredients and press evenly into the bottom of the baking dish.
  4. Step 4: Bake the crust for 10-15 minutes or until lightly golden.
  5. Step 5: While the crust is baking, macerate the rhubarb with sugar for about 10 minutes.
  6. Step 6: In another bowl, beat together the cream cheese filling ingredients until smooth.
  7. Step 7: Spread the macerated rhubarb over the baked crust, then pour the cream cheese mixture on top.
  8. Step 8: Mix the topping ingredients and sprinkle over the cream cheese layer.
  9. Step 9: Bake for an additional 30-35 minutes or until the topping is golden and filling is set.
  10. Step 10: Allow to cool before cutting into squares or bars.

Notes

Store leftover bars in an airtight container in the refrigerator for up to 5 days. They can also be frozen for longer storage.
