- Step 1: In a medium saucepan, combine the chopped rhubarb, water, and sugar. Set the heat to medium and bring the mixture to a boil. Stir occasionally to ensure the sugar dissolves completely.
- Step 2: Once the mixture reaches a boil, reduce the heat and let it simmer for 10-15 minutes until the rhubarb becomes soft and tender.
- Step 3: After simmering, remove the saucepan from heat and allow the mixture to cool. Then, use a fine mesh sieve to strain the mixture into a bowl or pitcher.
- Step 4: Stir in the rosewater into the strained rhubarb liquid. Taste and adjust as needed.
- Step 5: To serve, fill serving glasses with ice cubes, pour approximately 1/4 cup of the rhubarb mixture into each glass, and top with club soda.
- Step 6: Garnish each glass with fresh mint leaves and serve immediately.
