- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Cut the top off the head of garlic, drizzle with olive oil, and wrap in aluminum foil.
- Step 3: Roast the wrapped garlic in the oven for about 30-35 minutes until soft and golden brown.
- Step 4: Once cool, squeeze the roasted garlic into a mixing bowl.
- Step 5: Add sour cream, horseradish, lemon juice, salt, and pepper to the bowl and mix until smooth.
- Step 6: Adjust seasoning to taste and garnish with fresh chives if desired.
Notes
This sauce can be stored in an airtight container in the refrigerator for up to one week. It can also be made a day in advance to let the flavors meld together.
