Method
- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a large mixing bowl, combine the smoked paprika, garlic powder, onion powder, salt, black pepper, and olive oil. Mix well to create a flavorful marinade.
- Step 3: Add the chicken drumsticks to the bowl and coat them evenly with the marinade. Allow them to marinate for at least 15-30 minutes if you have time, or proceed right away.
- Step 4: Prepare the baby potatoes by arranging them on a separate sheet pan, drizzling with olive oil, and seasoning with salt and pepper.
- Step 5: Once the chicken is marinated, place the chicken drumsticks on the same sheet pan as the potatoes, ensuring they are spaced out evenly.
- Step 6: Roast in the oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown.
- Step 7: Once cooked, remove the sheet pan from the oven and optionally garnish with fresh parsley. Serve immediately.
Notes
For extra crispy skin, broil the chicken for the last 2-3 minutes of cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
