- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground ginger, ground cinnamon, ground nutmeg, and salt.
- Step 3: In another medium bowl, combine the packed brown sugar, granulated sugar, unsweetened applesauce, molasses, vegetable oil, and eggs. Whisk until smooth and well blended.
- Step 4: Gradually pour the wet mixture into the dry ingredients and gently stir until just combined.
- Step 5: Gently fold in the diced apples and nuts if using.
- Step 6: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Step 7: Bake for 18-22 minutes, checking for doneness with a toothpick.
- Step 8: Allow muffins to cool in the pan for about 5 minutes, then transfer to a cooling rack.
