  • 2 cups strawberries hulled and chopped
  • 2 cups rhubarb chopped
  • 4 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 packet fruit pectin (1.75 oz)

Method
 

  1. Step 1: Prepare the fruit by hulling and chopping strawberries and chopping rhubarb into small pieces.
  2. Step 2: In a large pot, combine chopped strawberries and rhubarb. Add granulated sugar and lemon juice. Stir well and let it sit for about 30 minutes to macerate.
  3. Step 3: Place the pot over medium heat and bring the mixture to a boil, stirring frequently.
  4. Step 4: When boiling, add fruit pectin and cook for an additional 1-2 minutes until the jam thickens.
  5. Step 5: Remove the pot from heat and skim off any foam that forms on the surface.
  6. Step 6: Pour hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.
  7. Step 7: Seal jars with lids and process them in a boiling water bath for 5-10 minutes.
  8. Step 8: Allow jars to cool completely before storing in a cool, dark place.
