- Step 1: Prepare the fruit by hulling and chopping strawberries and chopping rhubarb into small pieces.
- Step 2: In a large pot, combine chopped strawberries and rhubarb. Add granulated sugar and lemon juice. Stir well and let it sit for about 30 minutes to macerate.
- Step 3: Place the pot over medium heat and bring the mixture to a boil, stirring frequently.
- Step 4: When boiling, add fruit pectin and cook for an additional 1-2 minutes until the jam thickens.
- Step 5: Remove the pot from heat and skim off any foam that forms on the surface.
- Step 6: Pour hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.
- Step 7: Seal jars with lids and process them in a boiling water bath for 5-10 minutes.
- Step 8: Allow jars to cool completely before storing in a cool, dark place.
Notes
Consider using honey or agave syrup instead of granulated sugar for a natural sweetener. Homemade jams make for thoughtful gifts for friends and family.
