Method
 

  1. Step 1: Start by boiling water in a large pot. Once it's at a rolling boil, add a generous pinch of salt and the 8 ounces of pasta of your choice. Cook according to the package instructions until al dente, usually around 8-10 minutes.
  2. Step 2: Once cooked, drain the pasta using a colander. Then, rinse it under cold water for a few seconds to stop the cooking process and cool it down.
  3. Step 3: In a small bowl, whisk together olive oil, Dijon mustard, fresh lemon juice, lemon zest, and garlic powder. Season with salt and pepper to taste.
  4. Step 4: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, finely chopped red onion, and crumbled feta cheese.
